Flaky Cheese & Herb Twists

A refreshing Middle Eastern salad featuring crisp, toasted Arabic bread, fresh herbs, and zesty vegetables — light, vibrant, and full of texture.

Ingredients

  • 2–4 pieces of Arabic bread
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ½ red bell pepper, diced
  • ¼ red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1–2 tsp sumac (optional)
  • 2–3 tbsp olive oil
  • 1–2 tbsp lemon juice
  • Salt & pepper to taste

Method

  1. Preheat oven to 180°C / 350°F. Cut Arabic bread into bite-sized pieces and toast until golden and crisp.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and mint.
  3. Drizzle olive oil and lemon juice over the salad; add sumac if using. Toss gently to combine.
  4. Just before serving, add toasted Arabic bread pieces and toss lightly to maintain crispiness.
  5. Adjust salt and pepper to taste.
